Apparently Pennsylvania didn’t get the memo that it is Spring! We had a beautiful weekend and then it snowed on Wednesday! Seriously, what the hell?

I spent the weekend out of town at my mom’s house and took the kids to Sky Zone. I of course had to join in the fun and spent the entire hour on the trampolines as well. Great workout, he he he! The kids had a great time visiting with my brothers too, they love their crazy Uncles. On Sunday we had an Easter Egg hunt in my mom’s yard, our annual tradition. This year the local Trader Joe’s had an Easter Egg hunt in the store. I took my two younger kids and guess who found one of only five golden eggs?!?! My son! He received a large basket filled with all kinds of Trader Joe candy and goodies, all organic. Pretty sweet huh?

This week I am excited to share with you all our very first Healthy Vegan Fridays profile! Our first HVF’er in the spotlight is Janet from The Taste Space.

Like most, blogging is my hobby but most may not know that I am a physician by day.

2. What is your favourite vegan recipe?

Dal bhat: it combined simple with delicious. It is our favourite and most often repeated meal.

3. What is your favourite vegan ingredient or vegan cooking substitution?

Dark chocolate. It is a common question I get: is chocolate vegan? YES (provided it doesn’t have milk added)!

4. Who inspires you most, and why?

My partner-in-crime (and common-law marriage), Rob, is a constant source of inspiration and amusement. His unwavering support encourages me to keep trying new things.

    those tahini meltaways are good (there is a similar recipe in the new Rawsome cookbook I reviewed last month – I have made that recipe several times already!).

    that chocolate cream pie? OH MY! and I love the new profiles – so fun to get to know new people!

    That’s so cool that your son won an easter egg basket! I didn’t even know Trader Joe’s did anything like that. Very cool!

      Thanks Kimmy, hope you have a wonderful weekend as well. This was the first year Trader Joe’s did an Easter egg hunt, at least the one by my mom’s house.
