Hip, hip, hooray! It’s my favorite day of the week, FRIDAY! Fridays mean it’s almost the weekend and I get to spend time with my family and enjoy my long run on Sunday. Friday also means Healthy Vegan Fridays and awesome recipe submissions from you guys! So much deliciousness this week. Yum, yum.

Don’t these Quinoa Black Bean Burgers from Forks to Feet look incredibly? You guys certainly thought so! As Brandon points out in his post, “These burgers contain both Quinoa and Black Beans, which are some of the best plant-based sources of protein around. Not only is quinoa high in protein, but the protein it contains is complete (including all nine essential amino acids). These burgers are also loaded with fiber, iron, magnesium, and riboflavin (Vitamin B2), making them not only tasty, but completely healthy. To top it off, they are cholesterol-free!” Awesome~sauce!

Blueberry Vanilla Energy Balls from Chelsea’s Healthy Kitchen~I am a sucker for energy balls! I am always on the lookout for new flavor combinations and this blueberry + vanilla + coconut combo sounds fabulous.
Hungarian Goulash from Flora Foodie~In my pre-vegan days goulash was one of my favorite, quick, go-to dinners when I had bare cupboards and an empty fridge. I haven’t tried to re-create it to a vegan version and now I don’t have to! This looks delicious.
